The Château dining room is an elegant, convivial setting, frequented by both locals and resident guests, where we invite you to savour super fresh, authentic dishes and brasserie classics.
Our chef and his team serve lovingly prepared Mediterranean cuisine using only fresh, seasonal ingredients harvested from our on-site vegetable garden or sourced from local growers and farmers. The menu changes with the seasons to take advantage of the best the markets have to offer.
The restaurant is open every day of the year for lunch and dinner. We also organise special events and brunches on a regular basis.
Accessible to all our residents and for outside guests, by reservation and subject to availability.

The chefChef Fabien Guillaume draws his inspiration from his many travels, including the four years he spent on the island of Réunion, infusing his cuisine with originality and texture. Having worked in prestigious establishments such as the Hôtel de Crillon in Paris and the 3-star Michelin restaurant La Bouitte in the Alps, he decided to settle in the region to orchestrate the cuisine at Château St Pierre de Serjac.
FROM FARM TO FORT
The restaurant’s kitchen garden is more than just a place where we grow fruit and vegetables. It is a symbol of our commitment to sustainable gastronomy which we are delighted to share with our customers all year long.
By favouring organic farming we have eliminated the use of pesticides and chemical fertilisers, preserving the soil and surrounding ecosystems. We have also implemented sustainable practices such as crop rotation, organic waste composting and harvesting rainwater for irrigation.
Products we do not grow or farm are sourced locally from artisan producers. This reduces our environmental footprint while guaranteeing fresh, delicious and truly local and seasonal cuisine.
The Château offers a variety of spaces, each with our signature services, providing a setting where our guests can gather, enjoy the breathtaking views, or simply unwind.
Whether on the main terrace overlooking the vineyards, in the lounge bar or in the Caveau, guests can choose from a wide selection of cocktails, craft beers and sample the quintessence of Languedoc wines from a carefully curated assortment of little-known gems and Grands Crus.
The Caveau is also the ideal place to get together for private parties and receptions as well as special events and sporting occasions. Brunches, special menus and wine tourism workshops are offered throughout the year or can be organised on request.
Freshly prepared each day, our buffet breakfast offers the best local products to start the day. Choices include hot drinks, freshly squeezed fruit juice, fresh fruits, cold meats, eggs, pancakes, cakes, pies, pastries, breads, dairy products, cereals, cheeses, jams and butter, dried fruit and compotes, low-fat and gluten-free products.
Omelettes, fried and scrambled eggs are also available to order.
Served in the restaurant from 8am to 10:30am.
On request, breakfast baskets can be delivered to your villa for 17€ per person.
